This vintage of is made from Kick Ranch Sauvignon Blanc, which is sustainably farmed in the Fountaingrove District appellation. The hand-picked fruit was carefully selected, and night harvested at the exact moment when the fruit reached the right maturity and acidity levels to craft an elegant, delicate style of Sauvignon Blanc. The grapes were hand picked at night and delivered to Punchdown Cellars on the morning of September 13, 2018. The wine was made in a classic style of whole cluster pressing into a stainless tank. The resulting Sauvignon Blanc juice settled in the stainless tank for two days and then went through a three week cold fermentation process. After the completion of the fermentation process, the juice was transferred into 25 ...more... % neutral French oak barrels and 75% stainless barrels to age sur lie for six months in the barrels. The Sauvignon Blanc was filtered and bottled on April 15, 2019.
This Sauvignon Blanc gives a beautiful and elegant aromas of kiwi, grapefruit and lemon grass. The flavors have a unique balance of acidity, freshness and spices. This wine will age gracefully for several years and will be a favorite to have with lighter fare of seafood, poultry and the elegant cheeses of Sonoma County. It is produced from 100% Fountaingrove District Appellation Sauvignon Blanc grapes.
