Winemaker Phil Kaplan Notes
This wine is made in the style of a chablis. To hit that mark, we used a stainless steel regime with the fruit from Rita's Crown Vineyard. For the later, riper pick from Radian Vineyard, we took the wine through malolactic fermentation in French Oak barrels with 20% new oak. The result is a sophisticated, delicious wine. The nose is complex, with some earthiness, that gives way to citrus, white flowers and stone fruit. In the mouth, the wine delivers layers of lemon curd and flint. There is just enough hint of caramel in the finish to remind you that there was a little new oak in this regime. The wine is lively with a good backbone of acidity.
