Winemaker Remi Zajac Notes
A beautiful wine, this rare dry rosé is made exclusively from Petite Sirah grapes. A clear bright pink with touches of red, the wine shows a fragrant bouquet of white flowers. Inherent to the varietal, we find strong character and structure. The refreshing crisp acidity balances vibrant notes of asian pear and quince that stay long in the mouth. Food pairing: light red meats, grilled or roasted white meats and fish. Growing Season: The beginning of 2015 brought spring-like daytime temperatures, but the temperatures cooled down in March and April as the fruit slowly set over three weeks. May warmed up the vineyard and we got several heat waves in June, July, and August. We had minimal rain throughout the season. Because we grow our own g ...more... rapes, we made the best farming decisions to obtain the most beautiful fruit under these hot and dry conditions. Harvest took place in September 2015 with much smaller yields than usual, but the quality of the fruit was exceptional. Winemaking: We timed the harvest to obtain the best balance of flavors in the wine. The fruit was hand-picked and delivered to the winery in the cool early hours of the day and crushed immediately to preserve the delicate aromas and flavors. Fermentation was completed slowly at low temperatures in stainless steel tanks to fully obtain a complex combination of floral, fruit and spice aromas. The wine was then settled for several months at low temperatures prior to bottling. Our winemaking philosophy is to enhance the terroir and varietal characters by using traditional and natural winemaking techniques. Our low production volume allows us to track and nurture each batch of wine. We didn't add sulfites or other preservative in this wine. Vineyard: In a 10 acres vineyard located on the edge of a plateau above Mendocino Lake, we are growing Petite Sirah, the famed Black Grape of Mendocino. Petite Sirah is ideally suited to the local Mediterranean weather, and to one of the best vineyard soils in Mendocino county. The rich red color of the clay soil, a redvine sandy clay loam, is the signature of the vineyard. This exceptional terroir produces a complex and intense palette of fruity flavors balanced by intriguing spice characters. The vineyard is biodynamically farmed since 2013, and received the CCOF organic certification in 2015.
