Winemaker Remi Zajac Notes
2017 Mendocino Fair Wine Competition: Gold This ruby-style port wine is a young, early-drinking port. The Petite Sirah varietal makes a robust and versatile port that shows wonderful rich flavors. The deep dark red colored wine exhibits a bouquet of fruity aromas, followed by hints of oaks and leather. This port can be paired with an afternoon snack of  flavorful cheeses (Manchego, Roquefort,…) and fruits (figs, pears,…). It is a perfect companion to sweet desserts, and can even be used as an ingredient in desserts (panna cotta, poached pears…) or meat marinade recipes. Growing Season: The beginning of 2015 brought spring-like daytime temperatures, but the temperatures cooled down in March and April as the fruit slowly set ove ...more... r three weeks. May warmed up the vineyard and we got several heat waves in June, July, and August. We had minimal rain throughout the season. Because we grow our own grapes, we made the best farming decisions to obtain the most beautiful fruit under these hot and dry conditions. Harvest took place in September 2015 with much smaller yields than usual, but the quality of the fruit was exceptional. Winemaking: We timed the harvest to obtain the best balance of flavors in the wine. The fruit was hand-picked and delivered to the winery in the cool early hours of the day, hand-sorted, and fermented at low temperatures to develop even further the fruit characters of the grape. The fermentation was stopped at 9 Brix, and we added high-quality brandy to increase the alcohol just shy of 20%. The wine was then aged for 6 months in new and neutral barrels prior to bottling. Our winemaking philosophy is to enhance the terroir and varietal characters by using traditional and natural winemaking techniques. Our low production volume allows us to track and nurture each barrel of wine. We didn't add sulfites or other preservative in this wine. Vineyard: In a 10 acres vineyard located on the edge of a plateau above Mendocino Lake, we are growing Petite Sirah, the famed Black Grape of Mendocino. Petite Sirah is ideally suited to the local Mediterranean weather, and to one of the best vineyard soils in Mendocino county. The rich red color of the clay soil, a redvine sandy clay loam, is the signature of the vineyard. This exceptional terroir produces a complex and intense palette of fruity flavors balanced by intriguing spice characters. The vineyard is biodynamically farmed since 2013, and received the CCOF organic certification in 2015.
