Winemaker Steven Canter Notes

This vineyard, named for a majestic 130-year old Black Mission fig tree that stands amongst the vines, became certified 100% organic and Biodynamic in late 2005. Located at the confluence of two waterways on the Quivira estate, Dry Creek and Wine Creek, the soil has an extensive gravel layer due to its proximity to the creeks, creating a well drained site and yielding grapes with a unique flavor profile. The yields in 2008 were drastically reduced by several hard frosts in April. With such a small crop load the vines produced very concentrated fruit with more of the tropical (as opposed to grassy) flavors Sauvignon Blanc is known for. We fermented the wine with wild yeast in temperature controlled stainless steel to preserve the nerve and fo ...more... cus. Extended aging on the lees gave the wine added dimension. The resulting wine has an effusive nose of citrus blossoms and ripe melon. Although oysters and all shellfish are a natural match, this wine has the stuffing to pair well with roast pork or pasta with herb-infused cream sauce.
