2008 Estate Cabernet Sauvignon is a balance between elegance and bold expressing aromas of spicy currant, cedar, blackberry fruit and cracked pepper. The broad entry of anise, chocolate shavings and dark berries dance on your palate for a long finish with the Dry Creek dustiness.
Cabernet grapes are hand picked and gently destemmed into tank. Then they undergo a “cold soak”, which extracts color and flavors before fermentation begins while retaining the grape’s freshness. After fermentation is complete, the fruit continues with an extended maceration to improve mouth feel, balance, and encourage “softer” tannins. Lightly pressed at dryness followed by a natural malolactic fermentation in only the finest barrels.
