Winemaker David Hopkins Notes

The RESERVE SYRAH is designed to showcase the best wine that can be assembled in a particular vintage. The selection of cuvees by the winemaker David Hopkins starts at fermentation and is finalized after aging in a mix of water bent and heavy toasted small French oak barrels for 20 months is almost complete. Sourced from Cold climate vineyards all along the Central Coast, co-fermentation with Viognier for increased aromatics or Tannat for structure, partial barrel fermentation by pressing before fermentation is complete to soften tannins, red lees stirring to increase texture and mouth feel, 100% ML to stabilize the wine and individual barrel selection from 27 different vineyards all contribute to the assemblage. Aging, finning, and racking are lot specific with the final cuvee assembled 22 months after harvest.
