Winemaker Stephane Vivier Notes
Harvested in October 2011 during warm Fall weather, the fruit was high in sugars at 24.5 brix. Irrigation had been reduced several weeks earlier to force the fruit to condense the sugars and intensify the flavors to achieve their full potential. The warm dry weather with light winds held off the growth of botrytis and the grapes were hand-picked very early in the morning, in optimal condition, cleared of all leaves in the whole clusters and delivered to the winery before 10am, cool and fresh. The whole clusters were pressed for four hours up to a pressure of 1.2 bars, an extremely gentle pressing cycle that focuses on extracting most of the juice at the lowest pressure possible. After settling overnight in a stainless steel tank the juice ...more... was racked off into seasoned French Oak barrels to start the fermentation. The alcoholic fermentation occurred between the temperatures of 16 and 21 degrees Celsius and lasted about three weeks, while the wine was left sur lies. The secondary fermentation started mid-December and lasted a month and a half, and the final wine was sulfered mid-January for stabilization. The wine aged further in French Oak barrels for a total of 9 months. In July 2012, the wine was then racked again to tank and bottled without fining or filtration. The nose is led by lemon/lime peel, granny smith apples, and weathered stone (petrichor), and the color is pale gold with flecks of green. Pronounced secondary characteristics consist of Marcona almonds, cut grass and fresh cream. The mouth echoes the nose with an oceanic minerality that transcends the mid-palate. Persevering salinity, fresh butter, poached apples and pear gently carry this wine to a lengthy, creamy finish.
