Winemaker Patrick Davies Notes
Tasting Notes: With currant, blackberries and boysenberries on the nose, this is an excellent example of what Cabernet Sauvignon can do. On the palate the Cabernet shines with a welcoming smooth introduction that leads to a rich mid-palate. The finish is balanced with mature tannins that linger on the palate.
Our Mill Road vineyard, located on East 46 took to ripening earlier then our much cooler location on West 46. As such, Mill Road was harvested on October 4th at 25° Brix and our Estate came in on November 7th at 24.8 ° Brix. Each lot was fermented with BM-45 separately with skin extraction both equaling 11 days. Once secondary fermentation was completed both lots were combined and barrel aged in primarily French oak for 8 months. S ...more... pecially selected lots were extended aged in Trançoises French oak to add more spiciness to the palate. All told the wine spent 22 month barrel aging
