Tasting Notes: Plums, Apples and Kaluha greet your nose of this three-way blend. With a big fruity introduction and a structured long finish, enjoy this wine with grilled meats and good company.
Both Syrah grapes came in and where cooled in our jacketed tanks to 50 F. Inoculation was performed with ICV-D21 and skin contact was maintained for 14 days each. Light pressing at .6 bars and barreled down for 36 month aging. Both lots received 25% French oak and 25% Hungarian oak for eight months.The Merlot and Cabernet came in cold from the vineyard at a chillin ...more... g tempreture of 53 and 55 degree, respectively. Inoculation was performed with ICV-D254, Skin contact was limited to 14 days on the Merlot, but the Cabernet received 16 days to help extract more color and structure.Blending was performed after extended trials and the wine was bottled on 9/2/11.
