Black Cherries, Candied Walnuts, and a hint of Black Pepper Smooth introduction with flavors of cherries, blackberries, and toffee lead to a rich and balanced mid-palate. The finish is long yet soft with spicy notes intermixed with fruit. Tasting Notes: This blend has a bouquet of black cherries, candied walnuts, and a hint of pepper. Blackberries and toffee lead to a long structured fruity finish. Serve with hearty pastas or choice meats. Inoculated with our Syrah specific yeast strain, RX-60, and fermented in small 1-ton fermentation bins, we were able to closely monitor the fermentation of the Alonzo Family lot of Syrah. Oak ag ...more... ing was performed in primarily newer French oak barrels for about 36 month.The Merlot was fermented using the F-15 yeast strain, which is an excellent fermenter with Bordeaux varietals complimenting their mouthfeel while adding richness. We crushed to tank and performed 2 pump-overs a day to help extract maximum color. We then pressed after 12 days of skin contact, to keep the wine from extracting any harsh or tannic characters from the extracted skins, and barrel aged for about 35 months, utilizing primarily French Oak and the rest neutral. Blending was performed after extended trials and the wine was bottled on 9/2/11.
