Black Pepper, plums, cloves and cigar smoke
Upfront fruit that carries to a soft medium mid palate. The acids start coming up on the finish as does the fruit and a hint of tobacco. The finish softens then to delicate flavors of plums
Tasting Notes: This Rhone-style Syrah expresses itself with black pepper, plums, cloves and cigar smoke. Both fruity and spicy, it's balance and structure make it the perfect pair to your favorite grilled meat.
Inoculated with our Syrah specific yeast strain, RX-60, and fermented in small 1-ton fermentation bins, we were able to closely monitor fermentation. Extraction was extended to 16 days to allow full flavor composition release from the tough Syrah skins. Oak aging was performed in primarily newer ...more... French oak barrels for 3 years.
