Tasting Notes: With a luscious smell of blackcurrant juice and cloves, this delicious Barbera greats your palate with Blackcurrants and strawberries leading to soft and decadent finish with a kiss of cigar.
Fermented in bin, we performed 3 punch downs a day on the Barbera to insure slow and temperate fermentation. The color of Barbera is very delicate, so we were diligent in insuring temperatures and fermentation speeds were kept at a minimum. Inoculation with F15 was performed to compliment Barbera’s naturally round ...more... fruity mouthfeel. Barrel aging in primarily neutral oak was performed for 35.5 months. Bottling was performed on 9/14/11
