Tasting Notes: Rich and intense this black Petite Sirah delivers jammy notes of blueberries, blackberries and strawberries with a hint of anise. Enjoy with full flavored rich foods and great companyThis Petite Sirah came in to the winery loaded with character and color. We fermented using the F-15 yeast strain, which is an excellent fermenter with Petite Sirah complimenting its mouthfeel while adding richness. We crushed to tank and performed 2 pump-overs a day to help extract maximum color. We then pressed after 13 days of skin contact, to keep the wine from extracting any harsh or tannic characters from the extracted skins, and barrel aged for about 35 months, utilizing ~50% French Oak and the rest neutral.
